Let’s chat about pumpkin spice
First, do I love pumpkin spice? Yes. For sure! Do I love everything to be pumpkin spice from now until Thanksgiving? No. Do I love pumpkin itself? Yes sir. I add it to so many things such as cakes, muffins, soups, hummus. I roast and sauté it. We eat it mashed with butter and salt. It is just so delicious in so many ways. Pumpkin is also highly nutritious which makes it one of my favorites!
This flavorful combination makes my mouth water!
How to make pumpkin hummus
The first thing you will need is either a high-powered blender or a food processor. This is important because you want the hummus to be light and fluffy and fully pureed.
You’ll need 1 can of pumpkin puree and a can of garbanzo beans. Make sure it’s not pumpkin pie filling! Just pure 100% pumpkin puree.
I like to use organic for the pumpkin and the garbanzo beans. You don’t have to.
Measure out 1/4 cup of sesame tahini. If you are not familiar with tahini, it is ground sesame seeds. It adds delicious flavor and texture to the hummus.
Next
Juice 1 lemon and measure out the spices. You will need cinnamon, cayenne pepper, cumin, smoked paprika and salt.
Add the maple syrup. Pure maple syrup is best! Peel 2 cloves of garlic. No need to chop the garlic because it is all getting pureed in the processor.
Have a few tablespoons of ice water ready to mix in while processing and anywhere between 1/4 cup and 1/2 cup of a good quality extra-virgin olive oil. Taste matters here. Not all olive oil is created equal. Opt for extra virgin when possible and make sure that you like the flavor. I drizzle more olive oil on the hummus before serving or storing it so you will need more than the 1/4-1/2 cup that goes into the processor. Each batch of hummus is a different consistency depending on the water content in the pumpkin and garbanzo beans. You will need to adjust the amount of the olive oil accordingly.
Finally
Flaky sea salt, sprouted pumpkin seeds and sesame seeds make great toppings for this hummus recipe.
Sprinkle as your heart desires!
My favorite way to eat this hummus is with apple slices! Don’t knock it until you try it. It is so good!
