This zucchini appetizer recipe made with sourdough discard and all-purpose einkorn flour is so versatile and delicious. You will want to have this recipe on hand for all of your summer gatherings! A little history behind this zucchini appetizer
I don’t remember exactly how long it has been since I received this recipe but, I do know that it has been at least 30 years. My oldest, who is now 32 was a baby when I first started making these “zucchini squares” as we used to call them.
The recipe came from a sweet lady named Sharon. Sharon was the mom of my good friend Stephanie. Sharon loved to cook and she was great at it. She was so good that I remember myself asking (possibly begging) time and time again for her yummy recipes. And there was no need for begging because she shared freely! I have been blessed with a few of her creations and I find myself pulling them out of my recipe binder often. I made a few changes over the years for health reasons but the original recipe was just as delicious. The original called for Bisquick baking mix which I think was a very popular pantry staple in most homes when I was a child. Now, for many reasons we choose sourdough and fresh milled flours or einkorn flour and it doesn’t compromise the flavors in this recipe that I remember eating all those years ago.
How to make this zucchini appetizer recipe
It’s fairly easy to prep for and make this delicious appetizer.
First
First melt 1/2 cup of butter and let it cool while you prepare the rest of the ingredients.
Shred/grate a medium sized zucchini. I use a box grater for this step but you can certainly use a food processor/shredder/ knife or whatever you have on hand. I use 3 cups of grated zucchini here.
Finely chop 1/2 cup onion and mince a clove of garlic. Add the onion, 2 Tbs chopped parsley and garlic to the zucchini and set aside.
Now grate 1/2 parmesan cheese from a block. You can parmesan from a jar or buy it already grated. Any type will work but for best and freshest flavor grate it yourself at home.
Add the parmesan, einkorn or any all-purpose flour, baking powder, salt and pepper to a bowl and mix to combine.

Next crack 4 eggs in a bowl and give them a good whisk. Add 1/2 cup sourdough discard to the eggs.
Add the eggs to the zucchini mixture and stir, then add the dry ingredients. Mix until all the wet and dry are incorporated.
Finally
Grease a 9×13 with butter and pour the mixture into the greased pan. Place into a 350 degree preheated oven and bake for 25 minutes or until golden on top. Remove from the oven and if you can wait for 10-15 minutes, let it rest and cool slightly. Cut, serve and enjoy!
This makes a great breakfast addition alongside of fruit and cottage cheese or breakfast sausage and bacon. It can be eaten as a snack, appetizer or a light lunch with a garden salad. We have also served it over the years as a dinner side dish with steak or grilled chicken. Trust me when I say, it is amazing any time of the day or night!

Zucchini Appetizer
Ingredients
- 3 cups of grated/shredded zucchini (about 1 medium zucchini)
- 1 cup al- purpose einkorn or any all-purpose flour
- 1/2 cup grated parmesan cheese
- 1/2 cup finely chopped onion
- 2 Tsp fresh chopped parsley
- 1/2 tsp salt
- pinch of fresh ground black pepper
- 1/2 cup butter melted and cooled
- 1 clove garlic, minced
- 4 eggs, slightly beaten
- 1/2 cup of sourdough discard
Instructions
- Preheat oven to 350 degrees
- Grease a 9x13 baking dish with butter
- Add shredded zucchini, chopped onion, parsley and garlic to a bowl.
- In separate bowl add flour, grated parmesan, salt and pepper. Stir to combine
- Add sourdough discard to beaten eggs then add to the zucchini mixture. Stir to combine.
- Add dry ingredients to the wet and stir to incorporate dry ingredients into the wet.
- Pour into the greased baking dish and bake for 25 minutes until the top is golden brown.
- Rest on counter for 10 minutes before cutting.
- Cut, serve and enjoy!
