The days are sunny and hot. Everyone is looking forward to a cold frozen treat to help beat the heat. These homemade fudgesicles won’t disappoint. Lightly sweetened with honey and the right amount of dark chocolate will have you reaching for another. Make a double batch! They won’t last long!

First, let’s talk about ingredients in homemade fudgesicles
The most important part of a fudgesicle is the chocolate. My advice would be to use the chocolate that you love best. I am a chocolate lover! My favorite chocolate depends on the day and the season of life that I’m in. Right now my favorite chocolate bar is Hu, get back to human bar. As far as chocolate chips are concerned my two favorites are Ghirardelli dark chocolate chips and Lily’s stevia sweetened chips. For this recipe I use the Ghirardelli dark. These pops are so fudgy and full of flavorful chocolate.

Let’s look at the milk. When I want to make these homemade fudgesicles I use whole milk, however any type of milk can be used. I often use coconut and almond milk in my recipes but there are some recipes that I just can’t cheat and this is one. This recipe calls for full fat milk and heavy cream to make the most delicious treat possible.
Not all cocoa powder is the same. Again, use what you like best. I make these fudgesicles with King Arthur Triple Cocoa Blend. It’s so good. It is a perfect blend of Dutch-process cocoa, black cocoa and natural cocoa. It’s genius! If you are not a huge fan of dark intense chocolate use any plain store brand cocoa powder or Hershey’s. They will still turn out great.

Honey is a good option to sweeten the pops. You can use sugar. I have not used sugar in this recipe, so I don’t know the ratio. If you feel up to it, experiment with it and leave your results in the comment section. I would love to hear about it. I figure, the honey is amazing and it is a better option for our family than other sugars so I’ve always chosen honey.
Let’s talk sticks!
I prefer using the wooden popsicle sticks as opposed to the plastic ones that come with most plastic or silicone pop molds. Why? Because the larger wooden sticks are so much longer and reach the bottom of the fudge pop. Many times the plastic sticks have failed when trying to pull a frozen treat from a mold. There is nothing worse than holding a stick with no pop on the end!
How to make homemade fudgesicles
First you will heat the heavy cream and milk in a saucepan on the stove along with a pinch of salt. You don’t want the mixture to boil. As soon as the cream and milk are hot and steaming, turn off the heat.
Add the honey, cornstarch, cocoa powder and chocolate chips. Stir to dissolve the ingredients. This may take a few minutes.
Add the vanilla extract and the coffee extract (if using). The coffee extract is optional however it does intensify the chocolate flavor so my suggestions is, don’t leave it out. You can use the link below to purchase the extract if desired.

Once the mixture has cooled it is time to pour. If you choose, you can spray the inside of your molds with oil. I use coconut oil for this. Pour the mixture into the popsicle molds and insert sticks.
Freeze for at least 4-6 hours. Six is better and longer may even be best especially if it is super hot out.
When it’s time to enjoy, run the mold under warm tap water for a few second and slowly pull out the homemade fudgesicle.

Homemade Fudgesicles
Beat the heat of those warm summer days with the delicious and chocolatey homemade fudgesicles.
Ingredients
- 1 cup heavy cream
- 1/2 cup whole milk
- 3 ounces chocolate chips (I use Ghirardelli bittersweet dark)
- 3 T King Arthur triple cocoa powder blend or cocoa powder of choice
- 1/4 cup honey
- 2 T cornstarch
- pinch salt
- 1 tsp vanilla extract
- 1/2 tsp coffee extract (optional)
- coconut oil cooking spray to spray mold
Instructions
- First heat heavy cream, milk, and a pinch of salt in a saucepan on medium heat just until hot. Do not boil or simmer.
- When cream and milk are hot, turn off the heat.
- Add the honey, chocolate chips, cocoa powder and cornstarch to the milk and cream and stir to dissolve the dry ingredients. This might take a few minutes. Once it is all incorporated, add the vanilla extract and coffee extract.
- Cool the mixture.
- When mixture is cooled. Lightly spray molds with cooking spray.
- Fill the molds and insert popsicle sticks. If using wooden sticks. Cover the molds first with aluminum foil then poke sticks through the foil into the center of each mold.
- Freeze for at least 4 hours. Six hours is better!
- When ready to serve, run the mold under warm tap water for a few seconds and the popsicle should come out of the mold easily. Enjoy!
