Welcome to all of my healthy home cooked meals!
Welcome to Simply Eat at Home. This site was created to inspire others to cook from scratch and eat at home using whole, nourishing and healthy foods in their most natural form. There is a certain feeling of satisfaction that comes along with serving your family and friends a delicious, comforting and healthy meal or treat that your hands have created. I can’t wait to share my healthy, home cooked meals and recipes with you all!
First let me tell you a bit about myself. I was born and raised in the state of Connecticut where I continue to live with my biggest fans close by, my supportive husband, 4 amazing children and a very supportive mom. Being a stay-at-home mom for the last 32 years, well, I’d have to say that I have cooked too many meals to count. We have been a homeschooling family for the last 22 years so breakfast and lunches meant always eating the leftovers. Living on a one income budget has taught me to be creative, thrifty and never waste. I may have watched a few too many hours of Food Network and my cookbook collection may have been a bit embarrassing when I reached a total of 170ish books. I don’t like clutter and with a small kitchen I try to make every square inch of space purposeful.
My egg laying girls play a role in our healthy home cooked meals
I enjoy keeping chickens and collecting fresh eggs daily. A few years ago, I learned how to use the square foot garden method and have been quite successful. I look forward to using my garden each year to incorporate what I grow into healthy, home cooked meals. Being blessed with the ability to grow herbs in my backyard and enhancing my recipes with them is indeed the best!
I love baking sourdough bread and I try to include einkorn in to as many recipes as I can. Currently, I am playing around with fermenting foods, making kombucha and water kefir. My hope is that I can inspire you to try some new recipes, feed your family healthy, home cooked meals. Meals that you’ve created with your own hands and in your own kitchen at home. Essential oils are used in our home daily. I am always willing to trying out new natural remedies for good health.
The love of art!
I’ve kept myself busy over the past few years, when I wasn’t cooking, painting with watercolor. I love both painting and cooking, however, I would choose cooking and baking before watercolor.
Random fun facts:
The only country I have ever been to outside of the USA is Canada.
I love to “read” cookbooks. I don’t care as much about the recipes as I do the personal content that others write in their books before you get to the recipe. From what I am told, many people skip that part. It’s my favorite part of the book. I’ve narrowed down my collection to this small handful of books, with the exception of another small handful in the basement 😉
I don’t like going to the movies, in fact, in the last 25 years I have only been there twice!

Her mangos strawberry avocado salad is the best! So refreshing for the summer! Great recipe for all of your upcoming summer picnics.

This is my first visit to your website, but I wanted to wish you the best in your new endeavor. Your paintings are beautiful too. Apparently you are a very gifted woman. I have the pleasure of walking with your mother a mile on most days, and look forward to hearing stories of you and look forward to trying your recipes. I don’t mind telling you how proud she is of you!
